1/3 cup water
11/2 pounds (3 cups) cooked chicken, chopped or shredded (or 2 24 oz cans of chicken)
3 tablespoons olive oil
2 tablespoons lime juice (or juice from 1 large lime)
1 bell pepper, seeded and diced (color of choice)
5-7 cherry tomatoes, quartered
1 cup frozen corn, thawed
11/2 cups crushed corn tortilla chips
2 avocados, diced, optional
1 cup shredded mozzarella cheese, optional
