Here is how easy it is to make Pumpkin Pie Muffins...
1. Preheat oven to 325 degrees. 2. In a mixing bowl, combine muffin mix, eggs, oil, and milk; stir until well blended. 3. Pour mixture into greased muffin tins. Bake 20 minutes or until toothpick inserted in center comes out clean.
Yields: Approximately 18 Muffins
Optional add-ins: Add ½ cup chopped pecans or walnuts. Or add 1 cup diced candied fruit or any combination of dried fruits, such as pineapples, cherries, raisins or plums. (Muffins freeze well for up to 2 months.)
High-Altitude Instructions: Add 1⁄3 cup flour and follow directions above, allowing longer baking time as needed.
