Here is how easy it is to make Chicken Enchilada Soup...
In a 2-quart (or larger) stockpot, combine soup mix, diced tomatoes, milk and water.
Bring to a rolling boil over medium-high heat until temperature reaches 165 degrees, then reduce heat and simmer 15 to 20 minutes, stirring occasionally
If desired, add cooked chicken and heat through, about 5 minutes.
Serves 8
Serving Suggestion:
Top individual servings with tortilla chips, shredded cheese, sour cream and/or diced avocados.
